Bodegas Aizpurua
Getariako Txakolina, Basque Region, Spain
Bodegas Aizpurua is a family-owned and operated winery in the Txakoli de Getaria D.O. of Spain. Situated on the verdant mountain slopes of Meagas, along the north coast of Spain and near the famous Camino de Santiago, the Aizpurua family has been growing grapes and making wines since 1834 and has been a fully operational winery since 1905. Only 14 hectares of organically farmed grapes, from vines ranging from seven to well over fifty years old, are trained high to encourage air flow under the grape clusters in order to avoid mildew. Only 120, 000 bottles are produced from 95% Hondarribi Zuri and 5% Hondarribi Belza vines and the family prides themselves on making traditionally made, classic Txakoli.

Aizpurua Txakoli de Getaria Bianco 2022
Aizpurua Txakoli comes from the oldest and furthest north Txakoli zone, Getariako Txakolina (Txakoli de Getaria). Coming from the estate’s organically farmed (not certified) Hondarrabi Zuri vines, planted to sand and clay soils, this classically styled Txakoli was fermented at very low temperatures using only naturally occurring yeasts. Upon arrival in the cellar, the grapes are immediately chilled and blanketed with nitrogen, a process that preserves freshness, juiciness and acidity. The wines are fermented with native yeasts in steel tanks, also kept cold, and blanketed to capture carbon dioxide, which accounts for the light sparkle. The carbonation is entirely natural.
Clean and approachable with ample tart fruit and an exciting mouth-feel, this wine has salty, briny, tactile quality and makes it the perfect with many types of fresh seafood, yet also pairs beautifully with cured meats such as Jamon Iberico as the fresh acidity is the perfect counterpoint to the fatty richness of the ham. Only 11% alcohol from vines up to 60 years old.
